A Research Communication Brief: Gluten Analysis in Beef Samples Collected Using a Rigorous, Nationally Representative Sampling Protocol Confirms That Grain-Finished Beef Is Naturally Gluten-Free

چکیده
Knowing whether or not a food contains gluten is vital for the growing number of individuals with celiac disease and non-celiac gluten sensitivity. Questions have recently been raised about whether beef from conventionally-raised, grain-finished cattle may contain gluten. To date, basic principles of ruminant digestion have been cited in support of the prevailing expert opinion that beef is inherently gluten-free. For this study, gluten analysis was conducted in beef samples collected using a rigorous nationally representative sampling protocol to determine whether gluten was present. The findings of our research uphold the understanding of the principles of gluten digestion in beef cattle and corroborate recommendations that recognize beef as a naturally gluten-free food.

Feeding of Wet Corn Milling Byproducts to Beef Cattle
Corn milling byproducts are expected to increase dramatically in supply. Two primary types of milling processes currently exist, resulting in quite different feed products. The dry milling process produces distillers grains plus solubles, and the wet milling process produces corn gluten feed. These feeds can be marketed as wet feed, or they can be dried and marketed as either dry corn gluten fe...

Avoiding exposure to gluten is currently the only effective treatment for celiac disease. However, the evidence suggests that for most affected individuals, exposure to less than 10 mg/day is unlikely to cause histological changes to the intestinal mucosa. The daily diet of people with celiac disease does not rely solely on gluten-free pre-packaged foods, but also on naturally gluten-free grain...

Escherichia coli O157:H7 is an important human pathogen causing haemorrhagic colitis, haemolyticuraemic syndrom and thrombotic thrombocytopenic purpura. In this study, 100 ground beef samples were collected randomly from beef markets in June 2004. For isolation of the bacteria, samples were firstly enriched in modified trypticase soy broth, followed by plating onto sorbitol MacConkey agar sup...

BACKGROUND A strict and lifelong gluten-free diet is the only treatment of celiac disease. Gluten contamination has been frequently reported in nominally gluten-free products. The aim of this study was to test the level of gluten contamination in gluten-free products currently available in the Italian market. METHOD A total of 200 commercially available gluten-free products (including both na...
